PUMPKIN SPICE ARROZ CON LECHE (RICE PUDDING)
Ingredients
· 1 cup rice
· 2 ½ cups water
· 1 cinnamon stick
· 2 cans coconut milk
· 1 tsp pumpkin spice
· ½ cup pumpkin purée
· ½ cup sugar (or preferred sweetener)
· A splash of Vainilla Molina
Directions
1. Rinse rice to remove excess starch.
2. In a medium pot, cook rice with water and cinnamon stick over medium heat.
3. When most water has been absorbed and rice grains are soft, add coconut milk, pumpkin spice, pumpkin purée, sugar and a splash of Vainilla Molina. Mix well.
4. Bring mixture to a gentle boil, stirring occasionally so it doesn’t stick to bottom.
5. When rice is almost fully cooked, turn off heat. The remaining warmth will finish cooking rice without overcooking it or making it mushy.
6. Let it cool slightly before serving. Enjoy warm or chilled!
