3 delicious summer baking recipes

We all know summer is the perfect time to start up new hobbies, and so, we took it upon ourselves to compile a list of our favorite summer baking recipes for you to try out. They all take fresh seasonal ingredients, are done with simple steps and are each made with a splash of the #1 Mexican vanilla for a special touch. 

 

RECIPE 1: Citrus muffins  

Lemon and orange juice are essential for the perfect citrus muffin. Here's our favorite recipe for making them.  

Makes: 12 muffins  

Time: 40 minutes  

   

Ingredients:  

3/4 cup butter  

1 cup sugar  

3 eggs  

1 tbsp grated lemon zest  

1 tbsp orange zest 

3/4 cup orange juice  

Juice of 1 lemon  

2 cups flour  

2 tsp baking powder  

A pinch salt  

2 tbsp cornstarch  

A big splash of Vainilla Molina 

2 cups powdered sugar, for garnish  

Orange peel in thin strips, for garnish 

  

Steps:  

  1. Start by preheating oven to 356 º F / 180 ºC.  

  1. Beat butter with sugar to cream it, and add eggs one by one, then zests, Vainilla Molina and orange juice.  

  1. In another bowl, sift flour, baking powder, salt and cornstarch.  

  1. Add them little by little to the butter mixture, while whisking, until you have an integrated paste.  

  1. Pour into muffin pans prepped with muffin liners.  

  1. Bake for 30 minutes or until an inserted toothpick comes out dry and clean.  

  1. Remove from pan and let cool to room temperature.  

  1. Mix powdered sugar with lemon juice to make the frosting.   

  1. Spread this mixture over muffins and decorate with orange strips. 

 

 

RECIPE 2: Glazed berry tart 

Berries are the perfect summer fruit when they reach a sweet color and flavor, announcing their perfect point of ripeness.  

Makes: 1 tart / 10 servings  

Time: 2 hrs 30 min  

   

Ingredients for base:  

1 bag sweet crackers  

1/3 cup melted butter 

1 tsp cinnamon   

A big splash of Vainilla Molina  

   

Ingredients for filling:  

1 large package cream cheese, softened at room temperature  

½ cup sugar   

2 tbsp lemon juice  

1 cup whipping cream  

A big splash of Vainilla Molina  

¼ cup strawberry jam  

1 tbsp orange juice  

1 cup fresh blackberries   

1 cup fresh blueberries   

1 cup fresh raspberries   

  

Steps:  

  1. Preheat oven to 356 °F / 180 °C 

  1. Crush cookies in a blender to a fine powder.  

  1. In a large bowl, mix crushed cookies, melted butter, cinnamon, and Vainilla Molina until you get a wet sandy texture. 

  1. Place this mixture in a pie mold, pressing bottom and sides to create your base.   

  1. Bake for 10 minutes, until golden brown, then remove from oven and let cool completely.  

  1. In another bowl, beat cream cheese, sugar, lemon juice and Vainilla Molina. Add whipping cream and mix well.   

  1. Spread mixture over cooled base and refrigerate for 2 hours.   

  1. In a small bowl, microwave jam for 20 seconds.   

  1. Add orange juice and mix with a fork. 

  1.  Arrange fresh berries over entire surface and brush berries with jam and orange juice mixture. 

 

RECIPE 3: No-bake lime bars 

Even in its off-season, lime is one of the best fruits to use in baking. It adds a zesty summery flavor to any recipe. 

Makes: 12 bars 

Time: 4 hours or overnight 

  

Ingredients for crust: 

2 cups graham crackers 

A pinch salt 

¼ cup brown sugar 

6 tbsp melted butter 

A big splash of Vainilla Molina 

  

Ingredients for filling: 

1 package cream cheese, at room temp 

1 can condensed milk 

½ cup lime juice 

1 cup whipped cream 

Lime slices, for garnish 

  

Steps: 

1.  Whisk cracker crumbs, salt, brown sugar, melted butter and Vainilla Molina. 

2.  Press into a 9x13-inch baking dish. Place in fridge while you make filling. 

3.  In a large bowl, beat cream cheese, condensed milk, lime juice, lime zest and Vainilla Molina until smooth. 

4.  In another bowl, beat heavy whipping cream to stiff peaks. 

5.  Gently fold into cream cheese mixture in 2 parts, mixing until just combined.  

6.  Spread evenly over graham cracker crust. 

7.  Chill for 4 hours or overnight.  

8.  Top with lime slices, cut into squares and enjoy!
