    · 1/2 cup unsalted butter, melted

    · 1/2 cup granulated sugar

    · 1/4 cup brown sugar

    · A splash of Vainilla Molina

    · 6 tbsp pumpkin purée

    · 1 1/2 cups all-purpose flour

    · 1/4 tsp baking soda

    · 1/4 tsp baking powder

    · A pinch salt

    · 1 tsp ground cinnamon

    · 1/2 cup chocolate chips

    · 1/4 cup mini marshmallows

    1. In a large bowl, beat melted butter and both sugars until smooth.

    2. Add a splash of Vainilla Molina and mix with pumpkin puree until you have a smooth batter.

    3. Add flour, salt, baking soda, baking powder and cinnamon. Stir until combined.

    4. Add chocolate chips, cover dough and refrigerate for 30 minutes.

    5. Preheat oven to 356 °F and line two large baking sheets with parchment paper.

    6. Remove dough from fridge, shape into balls and place on baking sheet. Use the back of a spoon to slightly flatten each ball.

    7. Add mini marshmallows and press a few extra chocolate chips into the top.

    8. Bake for 11 to 12 minutes or until edges are set.

    9. Let cookies cool on baking sheet for at least 10 minutes before transferring to a wire rack to cool completely.
