PUMPKIN BITES
Ingredients
· 1/3 cup pumpkin puree
· 1/2 tsp pumpkin spice (a spice blend including cinnamon, ginger and nutmeg)
· ⅔ cup melted white chocolate
· 1 cup crushed vanilla cookies
· A splash of Vainilla Molina
· 1/4 cup sugar + 1 tsp cinnamon (for coating)
· Chocolate chips (for stems)
Directions
1. In a bowl, mix pumpkin puree, pumpkin spice, melted white chocolate (melt in 15-second intervals in microwave, stirring between each one), crushed cookies and a splash of Vainilla Molina until you have a smooth dough.
2. Cover bowl and refrigerate mixture for 1 hour to firm up.
3. Form tablespoon-sized balls with dough.
4. In other bowl, mix sugar with cinnamon and roll balls in this mixture to coat completely.
5. Using a toothpick, make lines on sides of balls to form pumpkin ridges.
6. Place a chocolate chip on top of each one as if it were a stem.
