
POTATO CHIP COOKIES

Ingredients

1 cup unsalted butter, softened

¾ cup brown sugar

1 cup sugar

2 large eggs, at room temperature

A splash of Vainilla Molina

3 ½ cups flour
-
1 tsp baking soda
-
½ tsp baking powder
-
1 tsp salt

1 cup milk chocolate chips
-
1 cup potato chips, lightly crushed
Directions

Preheat oven to 175 °C / 347 °F and line two baking sheets with parchment paper and set aside.

In a large bowl, beat butter and both sugars together until mixture is light and fluffy, about 3-4 minutes.

Add eggs and a splash of Vainilla Molina. Mix until well combined.

Add flour, baking soda, baking powder and salt. Stir until everything is well incorporated.

Carefully fold in chocolate chips and crushed potato chips until evenly distributed throughout batter.

Spoon dough onto prepared sheets, leaving spaces between each dough ball.

Bake for 10 minutes or until edges begin to brown. Cookies will look raw but will continue to bake as they cool.

Leave cookies on sheets for 3-4 minutes before transferring them to a wire rack to cool completely.
