My tricks for baking the best cheesecakes
Cheesecakes are truly the best dessert, but they can be a little difficult to master. Don't worry! Keep reading for a bit to see the secrets we've learned over the years to make your cheesecakes look super profesh.
1. Depending on cheesecake you're making, I'd suggest something acidic as a topping to offset the cake's richness. Maybe some chocolate-covered strawberries!
2. Prevent cracks from forming in your cheesecake by always beating your mixture on low speed. This will prevent you from introducing air bubbles that rise during cooking and crack your pie when it cools.
3. You can bake your cheesecake with the water bath method to help it cook evenly. To do so, just place a wider mold under your cheesecake and add boiling water up to half the height of your cheesecake.
4. When the cooking time is over, take your cheesecake out of the oven and run a knife dipped in hot water all around the edge. Doing this will help prevent your cheesecake from warping when it's cooling and shrinking.
5. Bring cream cheese to room temperature before making your cheesecake. Also, use a springform pan! Both of these things will result in a smooth, lump-free cheesecake.
6. Another very important tip is to add the egg pieces at the very end! Beating them adds more air, so it's best to add them last and beat until just incorporated.
