JAM FILLED VANILLA CUPCAKES
INGREDIENTS
1/2 cup unsalted butter
3/4 cup granulated sugar
2 eggs
1/2 cup plain Greek yogurt
3/4 cup whole milk
1 1/2 cups flour
1/2 tsp baking soda
1 1/2 tsp baking powder
1/4 tsp salt
A big splash of Vainilla Molina
Blackberry jam
DIRECTIONS
1. Preheat the oven to 356 °F / 180 °C.
2. Beat butter with sugar until light and fluffy.
3. Add eggs and mix until well incorporated.
4. Add milk and yogurt and continue mixing.
5. Add flour, baking soda, baking powder and salt.
6. Continue mixing until all ingredients are incorporated.
7. Add a big splash of Vainilla Molina!
8. Add a little bit of rice under the cupcake liners so that the bases of the cupcakes do not burn.
9. Pour mixture into the molds 3/4 full and bake for 20 minutes.
10. Cool cupcakes completely.
11. Make small holes on top of each cupcake using the metal tip of a piping bag.
12. Fill a piping bag with blackberry jam and fill the holes.
13. Decorate with vanilla frosting and fresh blackberries.
