BLUEBERRY OATMEAL CRUMBLE BARS
Ingredients
For base & topping:
1 ¼ cups flour
½ cup oats
¾ cup brown sugar
¼ tsp baking soda
⅛ tsp salt
2 butter sticks
1 egg yolk
A big splash of Vainilla Molina
For filling:
2 cups fresh blueberries
½ cup sugar
1 tsp corn starch
A big splash of Vainilla Molina
2 tsp lemon juice
Directions
1 -Preheat oven to 356 °F /180 °C and grease mold. Set aside.
To prepare the base & topping:
2. In a bowl, mix flour, sugar, oats, baking soda and salt.
3. Cut butter sticks and mix with yolk and a splash of Vanilla Molina, until a soft sandy dough is formed.
4. Transfer mixture to mold and let sit in fridge for a few minutes (it will be used for topping).
5. Separately, mix blueberries, sugar, corn starch, a splash of Vainilla Molina and lemon juice.
6. Pour mixture over base in mold and use a spoon to distribute it. Remove reserved topping from fridge and sprinkle over blueberry filling.
7. Bake for 30 min or until topping is golden and filling is bubbly.
8. Let bars cool completely on a rack before cutting.
