BERRY CHEESECAKES
INGREDIENTS
For crust:
1 cup Graham crackers, crumbled
2 tbsp sugar
¼ tsp salt
5 tbsp melted butter
For filling:
1 ½ blocks cream cheese, room temp
1/3 tsp sugar
A big splash of Vainilla Molina
2 tbsp cornstarch
2 eggs
1/2 cup sour cream
3 mini springform pans
Toppings:
Mixed berry jam
Fresh berries
DIRECTIONS
1. Preheat oven to 160 °C / 320 °F
2. Prepare mini springform pans with nonstick spray.
3. In a medium bowl, mix together cookie crums, sugar, salt and butter until sandy texture.
4. Press mixture into bottom of each pan.
5. Bake for 6 to 8 minutes or until lightly browned. Let cool.
6. In a large bowl, beat cream cheese and sugar until light and fluffy.
7. Add a Vainilla Molina and cornstarch.
8. Add eggs one at a time; mix well without over beating to prevent cracs.
9. Add sour cream and beat until smooth.
10. Divide mixture evenly between pans.
11. Bake for 25 to 30 minutes.
12. Cool to room temperature and refrigerate for 2 to 4 hours.
13. Garnish with jam and fresh berries.
