TIRAMISU COOKIES
Ingredients
For cookies:
1/2 cup unsalted butter, at room temperature
1/2 cup brown sugar
1/4 cup refined sugar
One large egg, at room temperature
A splash of Vanilla Molina
1 2/3 cups all-purpose flour
1/4 cup espresso powder
1/2 tsp baking soda
1/4 tsp baking powder
1/2 tsp salt
For mascarpone frosting:
1/3 cup heavy cream
1 cup powdered sugar
8 oz mascarpone cheese
A splash of Vainilla molina
Cocoa powder
Directions
1. Preheat oven to 175 °C / 347 °F and line a baking sheet with parchment paper and set aside.
2. In a bowl, beat together butter, brown sugar and caster sugar until light and fluffy.
3. Scrape down sides of bowl and add egg along with a splash of Vainilla Molina and beat until well combined.
4. Add flour, espresso powder, baking soda, salt and baking powder to bowl and mix until combined and no flour lumps remain.
5. Use a spoon to form cookie balls and place on prepared baking sheet, leaving space between each portion.
6. Bake cookies for 14 minutes and transfer to a wire rack to cool completely.
7. In a bowl, beat together mascarpone cheese, powdered sugar, and heavy cream for about 2 minutes.
8. Add a splash of Vainilla Molina and beat until combined.
9. Transfer frosting to a piping bag fitted with a round tip and pipe swirls of frosting onto each cooled cookie.
10. When ready to serve, sprinkle with cocoa powder and enjoy!
