TAPIOCA PUDDING
Ingredients
3 1/2 cups milk
1/2 cup whipping cream
1/2 cup sugar
1/8 tsp salt
1/3 cup small pearl tapioca
2 large egg pieces
A splash of Vainilla Molina Clear
Strawberries
Directions
1. Whisk milk, cream, sugar and salt together in a medium saucepan over medium heat.
2. Cook, stirring occasionally, until liquid just begins to simmer.
3. Add tapioca pearls and immediately reduce heat to minimum.
4. Continue cooking and stirring for 45-60 minutes, until tapioca pearls are translucent and smooth and mixture has begun to thicken.
5. Beat eggs in a medium bowl.
6. Add 1 cup of hot tapioca mixture, stirring well before combining tempered egg mixture back in saucepan with tapioca and milk mixture.
7. Continue cooking for 1-10 minutes, until thickened to your liking.
8. Remove from heat and add a splash of Vainilla Molina Clear.
9. Let cool at least 20 minutes before pouring into individual serving cups.
10. Serve warm and add strawberries.
