NO-BAKE MANDARIN CHEESECAKE

Ingredients

2 ½ oz butter

8 oz vanilla cookies

1 cup whipping cream
-
7 oz cream cheese, room temp

¼ cup powdered sugar
-
A splash of Vainilla Molina Clear
-
2 cans mandarin oranges in syrup, drained

Directions

Crush cookies in blender until they become fine crumbs.

Melt butter in microwave.

Mix crushed cookies with butter and then transfer mixture to a mold.

Spread mixure evenly over surface of mold to create a solid base; the firmer, the less likely the cheesecake falls apart.

Use a mixer to blend cream cheese in a bowl until you get a smooth consistency.

Beat in cream and sugar, add a splash of Vainilla Molina Clear and then mix again.

Pour filling over your crushed cookie base.

Use a spatula to spread and smooth filling carefully.

Refrigerate for at least 4 hours.

Unmold cheesecake and top with mandarin slices placed along circumference of cake
