HEALTHY CREPES
Ingredients
For crepes:
1 cup oat flour
1 tbsp cocoa powder
2 eggs
1/2 cup plant-based or light milk (+ 1/4 cup extra if needed)
1/2 tsp sweetener
A splash of Vainilla Molina
For filling:
1/2 cup plain Greek yogurt (unsweetened)
A splash of Vainilla Molina
1 cup chopped strawberries
70% dark chocolate, melted (for drizzling)
Directions
1. Blend oat flour, cocoa powder, eggs, milk, sweetener and a splash of Vainilla Molina until smooth and lump-free. If batter is too thick, add up to 1/4 cup more milk.
2. Heat a pan over medium heat and lightly grease with a bit of butter or oil.
3. Pour some batter into pan and swirl to form a thin crepe.
4. Cook for 1–2 min on each side until lightly golden. Repeat with remaining batter.
5. In a small bowl, mix Greek yogurt with a splash of Vainilla Molina.
6. Spread yogurt mixture over each crepe, add chopped strawberries as filling and roll up.
7. Drizzle with melted dark chocolate.
