GUAVA CHEESECAKE
Ingredients
For base:
2/3 cup wheat flour
1 cup almond flour
3 tbsp butter
2 1/2 tbsp sugar
For filling:
1/2 can condensed milk
5/8 cups guava puree
3/4 cup cream cheese
1/2 cup whipping cream
1 tbsp unflavored gelatin dissolved in 1/8 cup water
A splash of Vainilla Molina Clear
For topping:
1/4 can guava tea
1/8 cup water
1/2 tsp unflavored gelatin hydrated in 2 tbsp water
2 cooked guavas
1 tbsp cornstarch
Roasted almonds, to taste
Directions
For base:
1. Mix both flours with sugar.
2. Melt butter and add it to previous mixture until you get a sandy texture.
3. Pour mixture into a mold and bake for 10 minutes at 150 °C / 302 °F.
For filling:
4. Hydrate unflavored gelatin in water and heat in microwave for 30 seconds to dissolve.
5. Blend condensed milk, guava puree, whipping cream and cream cheese until you get a homogeneous mixture.
6. Add dissolved gelatin to step 5 mixture and add a splash of Vainilla Molina Clear. Stir again.
7. Pour mixture over already baked and cooled base, and place in fridge for 2 hours.
For topping:
8.In a pot, cook guava tea with water, a splash of Vainilla Molina Clear and cornstarch over low heat. Remove from heat and let cool to room temp.
9. Dissolve hydrated unflavored gelatin in microwave and add to step 8 mixture.
10. Pour this mixture over pie filling.
11. Top with guava slices and roasted almond pieces.
12. Refrigerate for 15 to set.
