FROZEN STRAWBERRY COLADA MOCKTAIL
Ingredients
For Strawberry Syrup:
· 1 cup water
· 1 cup granulated sugar
· 2 cups strawberries, quartered
· A splash of Vainilla Molina Clear
For Mocktail:
· 1 cup coconut milk ice cubes
· 6 frozen strawberries
· 1 cup pineapple juice
· ½ cup heavy whipping cream
· 1–2 tbsp strawberry syrup
· A splash of Vainilla Molina Clear
For Garnish:
· Sweetened condensed milk or coconut cream
· Pink sugar or sprinkles
Directions
For Strawberry Syrup:
1. In a saucepan, combine strawberries, sugar and water. Bring to a boil and cook for 10 minutes.
2. Reduce heat and simmer for about 6 minutes, until strawberries are soft and syrup thickens.
3. Remove from heat, add a splash of Vainilla Molina Clear and stir well.
4. Strain syrup and pour into a bottle or an airtight container. Refrigerate until ready to use.
For Mocktail:
1. Blend frozen coconut milk cubes, frozen strawberries, pineapple juice, heavy whipping cream, strawberry syrup and a splash of Vainilla Molina Clear until smooth and creamy.
2. Decorate rim of glass with sweetened condensed milk or coconut cream, then coat with pink sugar or sprinkles.
3. Pour in mocktail, serve and enjoy.
