CHOCOLATE POPSICLES WITH PISTACHIO
Ingredients
½ cup Greek yogurt
1/6 cup cocoa powder
4 tbsp whipped cream
1/8 tsp liquid stevia
A splash of Vainilla Molina
2 tbsp peanut butter
1 cup chocolate
2/3 cup roasted pistachios
1 tsp coconut oil
Directions
1. Blend yogurt, cocoa powder, cream, stevia, peanut butter and a splash of Vainilla Molina until you have a homogeneous mixture.
2. Pour mixture into a few molds and freeze it for 5 hours.
3. Melt chocolate in microwave along with coconut oil, in 30-second intervals, stirring before next interval to check if it has dissolved well.
4. Chop pistachios into small pieces.
5. Remove popsicles from mold and dip into melted chocolate-coconut oil mixture.
6. Set on racks to drain excess chocolate--and sprinkle pistachios on top while still hot!
7. Wait for chocolate to cool completely.
8. Enjoy!
