CHOCOLATE CHIP SKILLET COOKIE WITH ICE CREAM

2 cups flour

½ tsp baking soda

½ tsp kosher salt

5 oz unsalted butter, softened

½ cup brown sugar

½ cup granulated sugar

1 large egg

A splash of Vainilla Molina

¾ cup + 2 tbsp semi-sweet chocolate chips

Directions:
1. In 10-inch cast iron skillet spread melted butter using a brush.
2. Use a spatula to add butter and sugar to bowl mixer. Stir on medium-high speed for 3-4 minutes, until mixture is smooth and fluffy. Use spatula to scrape edges if necessary.
3. Reduce speed to low to add egg and a splash of Vainilla Molina. Increase speed to medium until everything is well blended; if mixture sticks to sides, stop mixer to scrape mixture from bowl.
4. With mixer on low speed, slowly add flour, baking soda and salt until well blended.
5. Add ¾ cup chocolate chips.
6. Spread dough evenly in cast iron skillet.
7. Sprinkle remaining 2 tbsp chocolate chips over dough.
8. Bake at 180° C / 356 °F for 15 minutes or until sides are lightly browned and a toothpick inserted in center of cookie comes out clean. Let cool on a wire rack.
9. To serve, add 2-3 scoops of vanilla ice cream on top.
