CHOCOLATE CHIP MINT COOKIES
Ingredientes
2 sticks unsalted butter, softened
1 cup sugar
1 cup brown sugar
2 eggs at room temperature
A big splash of Vainilla Molina
2 1/2 cups all-purpose flour
3/4 cup cocoa
1 tsp baking soda
1/2 tsp salt
2 1/2 cups divided mint and chocolate chips
Directions
1. In a bowl, beat butter and sugar at medium-high speed until a smooth consistency is obtained.
2. With mixer running, add eggs one at a time and then Vainilla Molia.
3. In another bowl, mix flour, cocoa, baking soda and salt, and gradually add mixture to egg mixture.
4. Add 2 cups of mint and chocolate chips and stir.
5. Refrigerate dough for 30 minutes or until it is easy to handle.
6. Preheat oven to 356° F / 180 °C and line two cookie sheets with parchment paper and set aside.
7. Shape dough into walnut-sized balls and place them separately on cookie sheet.
8. Bake for 5 minutes and remove from oven; top each cookie with remaining mint and chocolate chips.
9. Bake again for 6 more minutes.
10. When ready, let cool on a wire rack.
