CHAI SCONES WITH CHAI MAPLE GLAZED
Ingredients

12 tbsp very cold unsalted butter, cubed

½ cup very cold whipping cream

2 eggs

2 1/2 cups all-purpose flour

¼ cup refined sugar

1 tbsp baking powder

1 tbsp chai spice mix

½ tsp kosher salt

A splash of Vainilla Molina Clear

1 heaping cup of powdered sugar

2 tsp chai spice mix

A splash of Vainilla Molina Clear

3 tbsp whipping cream

1 tbsp maple syrup

Directions
1. Preheat oven to 374 °F / 190 °C and line a baking tray with parchment paper.
2. Beat whipped cream with egg pieces at medium-high speed until you get a creamy texture and set aside in freezer.
3. In a bowl, mix flour, sugar, baking powder, chai spices and kosher salt.
4. Add butter in squares and beat until you get a sandy texture.
5. Add cream egg mixture without stopping beating. Form a ball slightly moist to the touch.
6. Transfer dough to a lightly floured surface and let rest in fridge for 30 minutes.
7. Take out of fridge and place on floured surface again.
8. Roll out into a circular form and then use a sharp knife or a spatula to cut 8 triangles.
9. Put scones on previously prepared tray and bake for 22 minutes or until lightly golden.
10. Remove from oven and let cool before glazing.
11. In a small bowl, whisk powdered sugar, chai spice, a splash of Vainilla Molina Clear, heavy cream, maple syrup and a pinch of salt.
12. Pour glaze in a pastry bag and decorate the cold scones.
13. Let rest for 10 minutes for glaze to harden before serving.
