    For cookie dough:

    · 3/4 stick butter, at room temp

    · 1/2 cup granulated sugar

    · 1/4 cup brown sugar

    · 1 egg

    · 1 heaping tbsp applesauce

    · A splash of Vainilla Molina

    · 1 1/2 cups all-purpose flour

    · 1/2 tsp ground cinnamon

    · 1/4 tsp baking soda

    · 1/4 tsp baking powder

    · A pinch salt

    For crumble:

    · ¼ cup flour

    · 1 tbsp brown sugar

    · ¼ tsp cinnamon

    · 1 tbsp cold butter

    · A pinch salt

    For caramel cream cheese frosting:

    · ½ cup cream cheese, at room temp

    · ¼ cup unsalted butter, at room temp

    · A splash of Vainilla Molina

    · 2–3 tbsp caramel sauce

    · A pinch salt

    · 1 1/4 cups powdered sugar

    · Diced green apple (toss with a few drops of lemon juice to prevent browning)

    Cookie Dough:

    1. In a large bowl, beat butter with sugars until creamy.

    2. Add egg and a splash of Vainilla Molina and mix until combined.

    3. In another bowl, mix flour, cinnamon, baking soda, baking powder and salt.

    4. Add dry ingredients to wet ingredients and mix gently until just combined.

     

    5. Form small balls of dough (about 6 large pieces) and refrigerate for 1 hour.

    6. Remove from fridge and bake at 350°F for 12-17 minutes, depending on cookie size.

    7. Let cool completely before decorating.

    For crumble:

    9. Mix all ingredients with a fork or your hands until you get a sandy texture.

    10. Spread mixture onto a baking sheet and bake at 350°F for 5–7 minutes or until golden brown.

    11. Let cool and set aside.

    For caramel cream cheese frosting:

    12. Beat cream cheese with butter until smooth and creamy.

    13. Add a splash of Vainilla Molina, caramel sauce and salt. Mix well.

    14. Gradually add powdered sugar and beat to a smooth, fluffy mixture.

     

    15. Using a spatula or piping bag, decorate cooled cookies with swirls of frosting.

    16. Sprinkle baked crumble on top.

    17. Add diced green apple and finish with a drizzle of caramel sauce.
