Ingredients

INGREDIENTS

    Dough:

    1/2 cup softened butter  

    1/2 cup sugar  

    1 egg at room temperature  

    A big splash of Vainilla Molina Clear

    1 1/4 cup flour 

    1/2 tsp baking powder 

    1/4 tsp salt 

    1/4 cup buttermilk (¼ cup milk + 3 lemon drops) 

    1 cup fresh blueberries 

    2 tsp lemon zest

     

    Filling:   

    ¼ cup softened butter  

    ¼ cup softened cream cheese 

    1 tbsp maple syrup 

    1 tsp lemon zest  

    A big splash of Vainilla Molina Clear

    1/2 cup powdered sugar

DIRECTIONS

    Sandwiches:  

    1. Preheat oven to 180 °C / 356  °F and line a baking sheet with parchment paper.  

    2. In a bowl, cream butter and sugar until smooth and fluffy.  

    3. Add a big splash of Vainilla Molina Clear.

    4. Add egg and integrate with a spatula. 

    5. Pour in flour, baking powder, salt, and stir. 

    6. When everything is well integrated, add buttermilk and repeat process. 

    7. Add blueberries, lemon zest and stir again.  

    8. Refrigerate dough for 30 minutes.  

    9. Roll dough into balls using your hands and place them on a baking sheet. 

    10. Bake for 10 minutes or until lightly browned. 

    11. Remove from oven and let cool on baking sheet for 5 minutes. 

    12. Transfer sandwiches to a wire rack to cool completely.  

     

    Filling:

    1. In a large bowl, beat cream cheese until smooth. 
    2. Add powdered sugar, butter, maple syrup and lemon zest.  
    3. Add a big splash of Vainilla Molina Clear and stir.
    4. Pour filling into a piping bag, cover one of the lids and use another lid to create the sandwich.
    5. Enjoy!
