September baking challenge: Boozy tres leches cake
Hello again! This month, we've got a reeeaally great challenge for ya: a crazy delicious tres leches cake! This traditional Latin American dessert is MEGA popular in Mexico, Nicaragua, Venezuela, Panama and Colombia, among other Latin American countries. It's super creamy, and we promise it'll be a hit at any upcoming gatherings.
We'll show you how to bake a fluffy vanilla cake from scratch AND how to make the richest tres leches mix--with a neat touch of brandy ofc.
Let's get to the recipe! Ingredients for cake:
6 large egg whites
6 large egg yolks
1/2 cup granulated sugar, divided
1 cup all-purpose flour, sifted
1 can condensed milk
1 can half-and-half or whipping cream
2/3 cup evaporated milk
1/4 cup brandy
A big splash of Vainilla Molina
Ingredients for topping:
1 cup heavy whipping cream
2 tbsp granulated sugar
A big splash of Vainilla Molina
Directions:

Preheat oven to 375 °F.

Grease and flour a 9-inch springform pan.

In a large bowl, beat egg whites with 1/4 cup sugar until stiff peaks form.

In another bowl, beat egg yolks and remaining sugar until pale yellow.

Pour egg yolk mixture and flour into egg white mixture, adding alternately.

Incorporate folding motions with a spatula.

Pour into prepared pan.

Bake for 15-20 minutes or until lightly browned and a toothpick comes out clean after inserting it in the center.

Remove from oven and place on a wire rack to cool.

In a bowl, combine condensed milk, half-and-half, evaporated milk, brandy and Vainilla Molina.

Once cooled, poke the surface of cake all over with a toothpick.

Pour milk mixture over the entire surface and sides.

Let sit for 30 minutes so cake can absorb the milk.

Remove the ring of mold.
Directions for the topping:

In a small bowl, whisk together cream, sugar and Vainilla Molina until stiff peaks form.

Coat the entire surface of cake with this topping by using a spoon or a pastry bag with a round tip.

Sprinkle cinnamon on top.

Serve immediately and enjoy!
