May baking challenge: Churro cake

May is a good a time as any to bake Mexican desserts, so give this churro cake a go! It’s fluffy, swirled with cinnamon sugar, coated in delicious glaze and topped with churro flavorsYou can add dulce de leche or chocolate buttercream on top--or use no frosting at all! It's THAT good. 

 

Time: 55 mins  

Makes: 1 cake  

 

For cake: 

½ cup Greek yogurt 

1 cup granulated sugar 

3 large eggs 

A big splash of Vainilla Molina 

1 ½ cups all-purpose flour 

2 tsp baking powder 

½ tsp salt 

½ cup canola oil  

  

For cinnamon swirl: 

2 tbsp brown sugar  

2 tsp ground cinnamon 

1 tbsp milk 

  

For churro topping: 

2 tbsp granulated sugar 

1 tsp ground cinnamon 

  

For glaze: 

¾ cup powdered sugar 

¼ cup water 

A big splash of Vainilla Molina 

1 tbsp butter 

  

Prep your pan like this: 

1. Preheat oven to 350 ËšF (175 ËšC).  

2. Coat a round cake pan with baking spray. 

3. Rub over inside of pan with a paper towel to cover evenly. 

4. Place a piece of parchment paper at the bottom and spray a little more over that 

Directions for cake: 

1. Whisk yogurt, sugar, eggs and Vainilla Molina.  

2. Add baking powder, salt & flour and whisk again to combine well. 

3. Add in oil and mix to incorporate.  

4. Add 1/2 cup of batter to another bowl, mix in cinnamon swirl ingredients and set aside. 

5. Pour ¼ cup of plain batter to pan, letting it spread.  

6. Now pour in ¼ cup of cinnamon swirl batter and continue to alternate between these two batters until you run out of both. 

7. Bake for 30-40 minutes or until a toothpick inserted in the center comes out clean. 

8. Remove cake from oven, allow to cool completely, then flip out onto a cooking rack. 

 

Directions for glaze: 

1. Mix ingredients together, microwave for 70-80 seconds and stir. 

2. Brush top and sides of cake but keep about ¼ of the glaze. 

  

Directions for churro topping: 

1. Mix churro topping ingredients. Set aside. 

  

Directions to decorate:   

1. When glaze is dry to the touch, brush with remaining glaze, then immediately sprinkle with churro topping.  

2. Pipe dulce de leche or chocolate frosting on top. Don't forget you can also have it without any frosting!
