No-Bake Lemon Goodies

There’s something about that slightly tangy, fresh lemon flavor that just hits different when it’s hot out. Today, we're celebrating that irresistible citrusy goodness with 3 easy, homemade no-bake lemon desserts that are fresh, creamy, and totally delicious.

1. Classic Lemon Carlota

A Mexican favorite that never lets you down. It’s creamy, sweet, and perfectly balanced with the acidity of lemon. The condensed milk gives it that smooth texture we love, and a touch of vanilla takes it to the next level.

Ingredients:

· 1 can condensed milk

· 1 can evaporated milk

· ½ cup natural lemon juice

· Zest of 1 lemon

· A splash of Vainilla Molina

· 1 package of Maria cookies

Directions:

1. Mix milks, lemon juice, zest and a splash of Vainilla Molina until you get a thick cream.

2. In a pan, form a layer of Marias cookies, then a layer of step 1 mixture.

3. Repeat layers until you finish with a layer of lemon mixture.

4. Refrigerate for at least 4 hours (ideally overnight).

5. Garnish with lemon zest or thin lemon slices before serving.

Light, airy, and super refreshing, perfect to start or end a meal. It’s got that creamy vanilla flavor without overpowering the lemon, letting the citrus shine through.

Ingredients:

· 1 cup whipping cream (very cold)

· ½ cup condensed milk

· ¼ cup lemon juice

· Zest of 1 lemon

· A splash of Molina Clear Vanilla

Directions:

1. Whip cream until soft peaks form.

2. Gradually add condensed milk, lemon juice and a splash of Vainilla Molina Clear.

3. Add zest and mix gently.

4. Pour into individual glasses and refrigerate for 2-3 hours before serving.

This one’s fresh, creamy and just the right amount of tangy. The yogurt blends beautifully with the lemon, and the vanilla softens the acidity for a really pleasant, balanced flavor.

Ingredients:

· 1 package lemon-flavored gelatin

· 1 cup hot water

· ½ cup cold water

· 1 cup natural or Greek yogurt (unsweetened)

· A splash of Vainilla Molina

· Lemon zest (optional)

Directions:

1. Dissolve gelatin in hot water. Add cold water.

2. Let it cool slightly and mix with yogurt and a splash of Vainilla Molina until well combined.

3. Pour into individual molds or a large mold.

4. Refrigerate for at least 4 hours or until set.

5. Garnish with zest or fruit when serving.
