Fresh and healthy spring recipes!

Spring is the perfect time to put together a list of new drink and baking recipes you've been wanting to try out! So that's exactly what we did (for you!). Each of these recipes is made with a big splash of the #1 Mexican vanilla for an added, special touch.

Recipe 1: Pink lemonade

Makes: 1

Time: 15 min Ingredients:

· 4 lemons

· 8 glasses water

· 2 cups raspberries

· ½ cup sweetener

· Ice

· Lemon slices for garnish

· A splash of Vainilla Molina

 

Directions:

1. Cut and squeeze lemons into a bowl.

2. Strain juice, add raspberries, sweetener, a big splash of Vainilla Molina and mash with a fork.

3. Strain pink concentrate.

4. Add ice cubes and then pink concentrate to a pitcher. Top up with water.

5. Add lemon slices and stir to mix well.

Recipe 2: Lemon strawberry cupcakes

Makes: 14

Time: 40 min

Ingredients:

For cupcakes: 2 cups fresh strawberries 1 ½ cups sugar, divided 2 eggs ½ cup unsalted butter, softened A big splash of Vainilla Molina ½ tsp salt 2 cups flour For glaze: ¾ cup butter, softened ¼ cup lemon juice 1 tsp lemon zest 3 ½-4 cups powdered sugar 2-3 tbsp milk For topping: Lemon zest Strawberries

 

 

Directions:

1. Preheat oven to 356 °F and grease cupcake pans.

2. Mash strawberries with 1/2 cup sugar.

3. In another bowl, cream butter with remaining sugar.

4. Add eggs, salt and a splash of Vainilla Molina.

5. Gradually add strawberry mixture and flour, and beat until you get a homogeneous batter.

6. Pour batter into cupcake pans and bake for 16-18 minutes.

7. In another bowl, beat butter, lemon juice and lemon zest. Add powdered sugar and milk until smooth and creamy.

8. When cupcakes are completely cool, decorate top with cream, add strawberries, lemon slices and a little zest.

Recipe 3: Spring rainbow custards

Makes: 2

Time: 150 min

Ingredients:

· 2 ½ cups pouring cream

· 1 can condensed milk

· Red, blue, and green food coloring

· 4 ½ tsp powdered gelatin

· 12 tsp cold water

· A big splash of Vainilla Molina Clear

· Whipped cream and sprinkles, to decorate

 

 

Directions:

Part 1:

1. Place your serving glasses in a tray and refrigerate.

2. Heat liquid cream and condensed milk in a saucepan.

3. Stir over low heat for 5 minutes, until hot.

4. Remove from heat.

5. Add a big splash of Vainilla Molina Clear.

Part 2:

1. Transfer ½ cup of this mixture to a heatproof jug.

2. Use a little red food coloring to make the 1st pink layer.

 

Part 3:

1. Place 3 tsp of cold water in a bowl.

2. Sprinkle with 3/4 tsp gelatin powder.

3. Let stand for a couple of minutes to hydrate.

4. Microwave on high power for 10 seconds.

5. Stir to dissolve gelatin. Allow cooling slightly.

Part 4:

1. Stir cooled gelatin mixture into pink mixture.

2. Spread evenly into glasses.

3. Let sit in fridge for 15-20 minutes or until set. NOTE: The remaining cream mixture can be kept at room temperature.

 

 

 

 

Part 5:

1. Repeat steps to make rest of layers:

- Green

- Purple: mix red & blue food coloring

- Blue

Part 6: Decorate with cooled whipping cream and sprinkles
